This is another one of those recipes I probably wouldn’t have made if it weren’t for Baked Sunday Mornings.
It’s not that the pie sounds bad. The filling is kind of like a pecan pie – sugary, with coconut, pecans and graham cracker crumbs (that’s the sawdust). It’s all held together with egg whites.
The crust is just a classic pie crust – the recipe from this book is one of my favorites, and can be made in a matter of minutes.
I made the pie and brought it to our annual neighborhood gathering for National Night out. It was a big hit – I was asked for the recipe and several people said how much they liked it.
