I made these cookies for Larry to bring to a community meeting. I wasn’t sure about them at first – the filling is extremely minty, but when paired with the subtle mint chocolate cookie, it just works.
The other thing I love about these cookies is that they’re adorable. I used Green & Black’s mint chocolate for the cookie and Amano white chocolate for the filling. Andes mints could be used for the cookie but I think I liked the more moderate flavor of the bar. I love how they’re rolled in raw sugar before baking.
