Generally, the Baked cookies aren’t overly sweet – in fact, most of the recipes are judicious with the sugar. These cookies are one of the few exceptions, although a lot of the sweetness comes from the butterscotch chips.
I’m a fan. I generally don’t love peanut butter cookies, but the addition of butterscotch chips has put me squarely in the peanut butter cookie fan club. The sprinkle of sea salt on top helps balance the sweetness as well. I really should stop eating these, but I can’t.

These have made me have a change of heart too– PB are not usually my favorite, but these are great. I think the salt is perfect!
