These pita sandwiches come together quickly, especially when dinner is a team effort. Larry worked on the bean filling while I chopped ingredients and made up the chipotle mayo. The filling is vegan but the mayo isn’t, although it could easily be modified. We loved these, and Larry asked for another batch of the black bean filling to eat during the week. It’s great on its own, or would be nice in a wrap or even on regular sandwich bread.
