Lightened with whipped egg whites, these aren’t the most simple muffins to make. Theres also the extra step of grinding up blanched, sliced almonds, although I’m not sure it really made a difference. Almond flour might work just fine in a pinch.
These are made with orange zest and juice, but I’m partial to lemon and blueberry and would probably go that route next time. My muffins turned out a little green tinged from the blueberries. Oh, and I forgot to add the egg whites. In case you’re wondering, they turned out fine and are pretty tasty without.
